Among our family favorites for almost 30 years, these protein-packed, hot sandwiches make a super satisfying Sunday lunch.
3 ounces fat free cream cheese, softened
3 tablespoons light margarine, melted
2 cups cooked, shredded chicken breast or two, 5-ounce cans
¼ teaspoon salt
1/8 teaspoon pepper
2 tablespoons low-fat milk
1 tablespoon dried chives
1 tablespoon chopped pimento
½ teaspoon Tabasco, optional
1 can Pillsbury Reduced-Fat Crescent Rolls
Preheat oven to 350o.
In a medium bowl, blend softened cream cheese and two tablespoons melted margarine (save the rest) until smooth.Add all remaining ingredients except the crescent rolls, mixing well with a wooden spoon.
Separate crescent dough into four rectangles; firmly press perforations to seal.Spoon ¼ filling on one side of each rectangle.Pull dough over filling, pressing edges with a fork to seal. Brush tops with reserved margarine.
Place on pizza stone.Bake at 350o for 20-25 minutes or until golden brown.

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.
Tips:
If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.
If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
