Metallic Mix Ruffle Dress

I stumbled on a sleek, special-occasion dress when shopping at Southlake Town Square's LOFT with my friends Shelley and Linda. The fitted design has a bright, white cotton top with trendy, pleated ruffles at the neckline and a shimmery, gold-threaded skirt.

 

Metallic Mix Ruffle Dress.jpgAttracted by the summery, sleeveless style, I carried it to the fitting room only to meet Shelley trying on the same dress. I wanted the slim silouette for my birthday celebration with the girls the following week. (Naturally, I needed to look my best that night.) Shelley was considering it for a wedding. And we both thought it perfect for church. 

 

I knew we had a keeper when our fashion-advisor Linda, who's ALWAYS so put together, raved over the choice as did a fellow shopper. After we modeled the tailored look, she gave her endorsement and immediately went in search of one in her size!

 

Liking the way it fit, both Shelley and I purchased the fashion find ($89.50 before a 30 percent LOFT coupon.) But we promised to call each other before going out so we're never seen in it at the same time! We also agreed that the ruffled neckline called for minimal jewelry. 

 

For my birthday dinner, I paired the dress with J. Crew drop earrings and an Ann Taylor link bracelet, both in gold accented with crystals. The combination had the desired effect. The girls praised the outfit and inundated me with ideas for where to wear it next. Now, it looks as if my summer will be filled with "special" occasions.

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
