When it comes to shrimp, Bob and I feel a kinship with Bubba in Forrest Gump. He calls these little creatures "the fruit of the sea" because they can be prepared so many ways. And we couldn't agree more.
Shrimp's our favorite seafood hands down. We love it deep-fried at the Original Oyster House in Gulf Shores, AL, barbequed under Bob's watchful eye on our backyard grill and, now, sautéed in this tasty pancake recipe provided by Wild Planet Foods.
Shred zucchini and/or yellow squash on the large holes of a box grater. Place in a strainer, cover with a plate and place a weight, such as a can of tomatoes, on top. Allow to drain 20 minutes.
In a medium bowl, combine drained zucchini, corn kernels, onion, shrimp, feta cheese and eggs. Stir gently to combine. Sprinkle flour and herbs into bowl, mix again to combine all ingredients. Season with salt and pepper.
Heat canola oil in medium frying pan over medium heat. Drop mixture into hot oil with a large spoon, flattening to create pancakes 2 to 3 inches in diameter. Cook until golden, about 2 minutes per side. Drain on paper towels, sprinkle with sea salt and serve.
Yield: about 14 pancakes.

No bland, "canned" taste here. What's more, shrimp is an ocean-friendly option. According to the Monterey Bay Aquarium Seafood Watch program, shrimp is one of the "best choices" you can make for sustainable seas as well as for your health.
Would We Do It Again
A definite: yes. Besides tasting great, these delightful little fritters are packed with heart-healthy Omega 3s and body-building protein. They could be just what the doctor ordered. In fact, our family doctor, Mike, likes shrimp almost as much as his favorite movie, Forrest Gump.
