Catching Up With...Gene Tyler

Gene is President of United Specialty Benefits (USB), an employee benefits management company in Bedford, TX. He's a father of two lovely daughters (Lindsey & Mallory) and - you wouldn't know it by looking at him - is a grandfather (Maverick).

Gene's Fish 2010 - 350.jpgWhen Gene and his lovely wife, Shelley aren't cheering Mallory on at a school event or bouncing Maverick on their knees, you're likely to find them scuba diving off the coast of Grand Cayman island - their favorite getaway.

 

We caught up with Gene between business trips to San Antonio and Chicago...

 

What did you have for dinner last night?
Mexican food from Mi Cocina.

What's on your DVR?
Law & Order.

Crunchy or Smooth? Maryanne or Ginger? Elvis or The Beatles? Dog or Cat?
Smooth peanut butter - definitely. The rest are even easier - Maryanne from Gilligan's Island and everybody knows Elvis is still the KING. Dog or Cat? Neither. I've got a saltwater aquarium and I prefer watching the fish.

Favorite Soft Drink and Adult Beverage.
Diet Dr Pepper for the soft drink. Hendricks & Tonic after 5 p.m.

Lowe's or Home Depot?
I was a hardcore Home Depot guy - but I'm starting to like Lowe's better.

Conan, Letterman, Leno, Fallon or Ferguson? 

I'm a Letterman guy.

 

Where Are You Traveling Next?

Chicago.

 

Favorite Movie?
True Grit - the original version with John Wayne.

 

The One Electronic Gadget You Can't Live Without?
My iPhone - won't go anywhere without it. Favorite App is Words with Friends.

 

Favorite Vacation?

Diving in Grand Cayman or watching the sunset from the deck at Casanova restaurant on Seven Mile Beach.

Diabetes-Friendly Chicken Burrito Bowl

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
