Catching Up With... Mary O'Neill

Mary's a hospice nurse by night and a lot of things during the day - dog lover, fitness buff, gardener (she confesses to being Mary, Mary quite contrary, after all!) and fan of American Idol. She lives in the Texas Hill Country (a slice of heaven that stretches from about Waco to just south of San Antonio) and is always active with friends, family or her beloved dog, "Pumpkin".

 

We caught up with Mary as she was enjoying a rare break in her busy schedule. She agreed to kick back, pour herself a glass of wine and answer a few questions...

What are you doing these days? 

I'm a night time hospice nurse.

Because of the late hours, sometimes I do not roll out of bed till noon or so. 

 

But, regardless of the time I get up, coffee and reading the daily devotional from Jesus Calling are first, often to be followed with some leftover charting from the night before, email reading, play a little mindless Mafia Wars, then walk with my dog/neighbors, possibly to be followed by a little wine and girl talk or less frequently, house or yard work.  

 

What is your dog's name and what kind of dog is he/she?

Her name is Pumpkin.  She is supposedly a lab mix...just a guess since don't know who or what her parents are.

 

What are some of the fresh fruits and veggies in your fridge? 

Lettuce, grape tomatoes, beets, sweet potatoes, apples, strawberries.

 

What did you have for dinner last night? 
I had my bi-weekly girls' night out with a dear friend. Last night's fare: sushi and wine (you may begin to see a pattern here).
We ate at a place called Hayashi Sushi Bar and Grill.

 

During happy hour, all wine including bottles is half price! We order a lot of food and split everything: calamari, fried sweet potato sushi roll, something called Ex-girlfriend sushi roll (crab, smoked salmon, shrimp, avocado, and cucumber) and there's a crunchy crab roll that's fabulous...It's a great deal!!

 

Name three things in your fridge. 

Huge jar of picante sauce, lots of fresh fruits and veggies (I'm one of those annoying vegetarians) and almond milk.

 

What's on your DVR? 

Too much: American Idol (seasonal obsession), Modern Family, The Middle, The Doctors, The Closer, Dog Whisperer and Young and the Restless (closet obsession).

 

Favorite adult beverage.

Wine. I prefer reds - merlot, cabs, but will drink any of it.

 

Last movie you saw in a real movie theater.

That's easy - last night I saw Hanna. Save your $$ on this one. I wanted to see it largely because of Cate Blanchett, but she didn't have a big part. I really didn't think it was that exciting and it was a little too long. It did have an interesting concept - a little sci-fi meets 007 - but not enough to really interest me. 

 

Favorite iPhone app.

I don't actually have "the" iPhone but I do have an Android smart phone. My favorite app: SoundHoundYou hold it up to the radio - it analyzes the song - then shows the title, artist, and lyrics. I'm in HEAVEN!!

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.

Health Bite: The iron, calcium, magnesium, manganese, copper and zinc in black beans help to keep bones strong and healthy.
