What We Liked

There's nothing easier than opening a bag of pre-popped corn. And you get incredible crunch in every bag thanks to G.H. Cretors' large, wonderfully fluffy kernels made from mushroom-style popcorn.

How It Tasted

Simply delicious, especially if you're like us and hooked on the three C's. That's crunch, cheese and caramel but not necessarily in that order.

 

The only problem was choosing a favorite. I loved the cheddar cheese because besides packing a real cheddar punch, two cups has only 170 calories. Since Bob always goes for something sweet, he liked the caramel corn with its deep toffee flavor and thought it was even better when mixed with whole cashews and almonds. We both adored the cheddar-and-caramel-inspired Chicago Mix because you get hints of sweet, salty and cheesy in every bite. Nice! And we were surprised by how much we enjoyed the salty-yet-sweet Kettle Corn.

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
