Here's the Dish: Tasty Pan-Fried Tilapia

When Bob and I visit our favorite beach in Gulf Shores, AL, we always crave fish. But I don't want to go to a lot of effort to make it ... after all, we're supposed to be on vacation. So, I usually pull out this easy Pan-Fried Tilapia recipe.

You can use this tasty recipe to pan fry Tilapia, catfish or any firm white fish.

Besides being super simple, it needs only 7 ingredients and can be ready in a flash.This lightly breaded sensation gets a flavor boost from Old Bay seasoning, Ranch dressing and hot sauce.

Old Bay seasoning, Ranch dressing and hot sauce give this southern creation a tasty kick.

Sure to please the whole family, this main dish is based on an idea I got from Southern Living (one of my favorite sources of cooking inspiration) about 6 years ago. Since then, I've made this delish fish everywhere from home in Colleyville, TX to Gulf Shores where I often substitute fresh-caught Pangasius for Tilapia. Why?  It's the thing there. You can also use catfish or any other firm white fish.

This recipe serves 4 so I usually half it when cooking for just the 2 of us. You'll really enjoy it served with coleslaw, Sweet Cornbread Muffins and French Fries. Just don't be surprised if there aren't any leftovers!

 


Tasty Pan-Fried Tilapia

Serves 4

  • Pangasius - 600.jpg3/4 cup Bisquick (We like the Heart Smart version.)
  • 1/2 cup yellow cornmeal
  • 1 tablespoon Old Bay seasoning
  • 1/2 cup Fat Free Ranch dressing
  • 1 teaspoon of your favorite hot sauce (such as Cholula, Frank's or Tabasco)
  • 2 (8-ounce) Tilapia, Pangasius or other firm white fish filets
  • 3 tablespoons vegetable oil

Mix the Bisquick, cornmeal and Old Bay seasoning in a pie plate.

Combine Ranch dressing and hot sauce in a small bowl.

Rinse fish filets and pat dry with a paper towel. Cut each filet into 2 or 4 pieces, depending on your preference. (We like smaller pieces so you get a little more breading.) Brush both sides of each filet with Ranch dressing mixture. Dredge in breading, coating both sides. Refrigerate for 30 minutes.

Cook fish in hot vegetable oil in a large nonstick skillet over medium high heat for 3 to 5 minutes per side or until it flakes easily with a fork. As pieces get done, place on an ungreased baking sheet and keep warm in a 200-degree oven until ready to serve.

Offer red sauce, ketchup and/or lemon wedges as condiments.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
