John Hiatt

I know that many of you have been fans of singer/songwriter John Hiatt for a long time. I'm a new convert to the certifiable American legend, thanks to "discovering" him through Pandora.

Anyone who wants to say, "well I've known about him since the '70's and he's great," can state their superiority in the comments section.

Singer/Songwriter John HiattJohn Hiatt-600.jpgHiatt's a Baby Boomer (born 1952) who's written and recorded songs with everyone from Bob Dylan and Buddy Guy, to Eric Clapton and Emmylou Harris. He's had hits with Three Dog Night - so do the math and you'll know he's been around a long time. 

That's good, because this guy's got a sound that's damn near historic. He's been recording solo albums since 1974 and has 21 albums to his credit.  

The Blues Can't Even Find Me, John Hiatt

Hiatt's got a face like James Taylor and a distinctive voice that sounds like it's been filtered through bad whiskey, unfiltered Camels and too many nights in a barroom. He's hard to classify - blues, yes definitely, but there's folk hiding in here, too. If John Prine, Tom Waits and Townes Van Zandt had a love child, it'd be John Hiatt.

The John Hiatt song that's stuck in my head is his The Blues Can't Even Find Me. Give it a listen and see if discovering John Hiatt doesn't make you very happy.

Diabetes-Friendly Chicken Burrito Bowl

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
