Christie Brinkley stole the show when she starred in National Lampoon's Vacation in the 80s. And she's still hot after all these years, thanks in part to a to-die-for complexion. You'd never guess she's 61! 

So when I heard she'd collaborated on a new anti-aging skincare line, I couldn't wait to give it a try.

What's the Scoop?

This cutting-edge collection recognizes that most visible signs of aging skin come from the sun. The line is among the first in the U.S. to defend against damage from Infrared rays, which make up about 54% of the rays that get to us. Most other creams only guard against UVA and UVB rays, which represent about 7% of what reaches the earth.

In addition, these innovative products are infused with a proprietary Bio-Copper Complex. This blend of plant extracts, amino acids and copper is designed to support your skin's anti-aging defenses, providing smoother, firmer, healthier and younger-looking skin.

What I like

Christie's multi-tasking collection works on softening fine lines and wrinkles while providing advanced sun protection to guard against future damage. From day 1, these products have babied my skin leaving it feeling nice and soft ... not at all greasy. So whether I applied makeup or headed to bed afterwards, there was no waiting.

After using the line for several weeks, my face and neck are in better condition, there's no sign of dryness and I've had no unpleasant side effects. That's a HUGE plus because my skin tends to erupt in ugly red splotches when it's unhappy.

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.


If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
