Here's the Thing

Actor Alec Baldwin is one of those performers you either love or hate. Some people just love to hate him. Me? I love his podcast, Here's the Thing, and I'll let y'all sort out the rest of it for yourselves.

Here's the Thing Logo-373.jpgRegardless of where you stand on the whole Alec Baldwin like Vs dislike debate, one thing is undeniable: the guy is crazy smart. His (typically) hour-long interviews are as entertaining as they are educational. 

Here's The Thing is a series of intimate and honest conversations where Baldwin talks with artists, policy makers and performers. The guests tell their stories, what inspires their creations, what decisions changed their careers, and what relationships influenced their work.

Alec Baldwin is a gifted interviewer who asks the questions you'd ask if you were in the room. I've heard him talk shop with Kevin Kline...business with Michael Eisner...criminal defense with Making a Murderer attorney Dean Strang...and what it was like to make all those iconic 80's films with Molly Ringwald. He knocks each interview out of the park with insight, humor and intelligence.

Diabetes-Friendly Chicken Burrito Bowl

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.

Health Bite: The iron, calcium, magnesium, manganese, copper and zinc in black beans help to keep bones strong and healthy.
