My mother has a to-die-for complexion. Sure, she's old enough to be you know, my mother, but you could never tell it by looking at her skin.

Although I'd like to think I take after mom, the mirror has me worried. That's why I was thrilled to try IT Cosmetics' new Bye Bye Collection. When I told my dear friend Becky I was testing them, she immediately asked "What's IT?" So let me start by saying they're one of my fav anti-aging makeup (think SuperHero Mascara) and skincare lines. What I like: Not your typical serum, this super-light cream leaves my skin silky smooth and glowing. Bob's Foot-350.jpgI do try and live a reasonably healthy lifestyle. And after extensive research I've learned that moderate exercise may not help me live longer, but it will help me die slower. So I've got that going for me. 

My day typically begins with a four-mile walk inside the bubble that houses Colleywood and Baja Colleywood (you know it as Euless). It's an urban/residential mix and my only wildlife sightings are what I see on the sidewalks, streets and parking lots.

Full disclosure, I've seen the coming of the lard and it's delicious...

There's a pattern here. I see the same "types" of people every day. The seasons change...the outfits are constantly changing, but the people...well, I've identified 4 distinct groups.

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.

Health Bite: The iron, calcium, magnesium, manganese, copper and zinc in black beans help to keep bones strong and healthy.
