Top Recipes 2016 with Salmon Cakes 600.jpgI love talking food and recipes, sharing our family's favorite dishes and finding new things to try. Lucky for me, Bob never shies away from an experiment!

 

But before we dive into plans for 2017, I thought it would be fun to see which of last year's picks you all liked the most. So let's take a look at the five most popular Boomer Brief recipes from 2016.

5. Addictive Apple Blondies with Brown Sugar Frosting

Chopped, fresh apples keep these sweet treats moist while walnut pieces add a little crunch. From The Best of Bridge Home Cooking cookbook, they're perfect for sharing with family and friends.

4. Easy, Cheesy Sriracha Chicken Dip

You all must enjoy easy as much as I do because our fourth most popular recipe from last year comes together without a lot of fuss in the kitchen. Think queso but heartier and more interesting thanks to chicken, Tex-Mex seasonings and Sriracha. That hot and tangy red chili pepper sauce with a hint of sweetness provides a nice kick.

We keep the ingredients on hand because this dip makes a super snack supper for two as well as a great game-day appetizer for the gang. Serve it with corn tortilla chips and your guests will go after for every last drop.

Since it cooks in the microwave, this spicy chicken-and-cheese combo can be ready in a flash.

3. Texas-Style Pinto Bean Chili or Meatless in Cowtown Frito Pie

A football-watching party in Fort Worth (practically our backyard!) inspired Meatless in Cowtown author Laura Samuel Meyn to create this tasty Frito Pie recipe. It includes her go-to chili topped with grated Cheddar cheese, fresh cilantro, sour cream, red onions, and, of course, Fritos.

Ideal for our niece Jacquelin and others on special diets, it's gluten-free, vegetarian and vegan (if you omit the cheese and sour cream). But even devoted meat eaters like Bob won't miss the beef.

2.  Simple Salmon Cakes with Sriracha Ketchup  

My spin on my mom Patsy's classic pan-fried salmon croquettes is one of our favorites for a light supper or Sunday lunch. Bob and I enjoy topping these bits of salmon goodness with my brother David's clever recipe for Sriracha Ketchup. Talk about yummy! But they're also delightful with a simple squeeze of lemon.

You can have eight, small salmon cakes on the table in under an hour with this recipe.

1. Authentic Italian Pizza Margherita La Casa

Our most popular 2016 recipe was no surprise to two people as crazy about pizza as Bob and me. We could eat it every meal!

This version of the world's most famous pizza comes from Craig Whitson's and Tore Gjesteland's Passion for Pizza cookbook.

It layers homemade Neapolitan dough with "Simple Is Often Best" Tomato Sauce, mozzarella, basil, Parmigiano-Reggiano and a bit of olive oil. Now, that's a winner.

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.

Health Bite: The iron, calcium, magnesium, manganese, copper and zinc in black beans help to keep bones strong and healthy.
