I was cleaning out a file and ran across this rendering of Elvis at the first Thanksgiving. Cole did this work of art in the first or second grade. Yeah, that's right, when other kids were tracing their hands and drawing make believe turkeys, Cole was imagining Elvis at the first Thanksgiving. You have to give the guy credit, it's an amazing likeness.

It's almost like you're there sitting next to the King of Rock 'n Roll. Can't you just hear him say, "Colonel, how 'bout passin' me the stuffing and another jelly doughnut....thank ya very much!"

The co-worker was leaving and it was time for the lets-have-some-cake-and-blow-off-the-rest-of-the-afternoon-party. Sounds like a good idea, right? It was, until they called the bakery.

For the record, the bakery clerk was told the cake should read, "Best Wishes Suzanne" and underneath that, write, "We Will Miss You". Some things just can't be handled over the phone...

According to the Social Security Department James and Mary were the most popular names the first year of the Baby Boomer generation (1946). Since that time, names have fallen in and out of fashion as moms and dads strived to be trendy...but not too trendy. If you're like me, you probably went to school with a lot of James (he was my arch nemesis, but that's the subject of another post) and I flirted with my share of Marys.

The James and Marys of '46 have given way to today's Jacob and Emma. According to the government, they're the two most popular names in 2008. I'm betting a couple of you Boomers have grandchildren with those names or a version of them.

Diabetes-Friendly Chicken Burrito Bowl

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:  

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.

Health Bite: The iron, calcium, magnesium, manganese, copper and zinc in black beans help to keep bones strong and healthy.
