Hot & Cheesy Chicken Dip

Celebrate Cinco de Mayo with this new take on a Tex-Mex favorite.   Inspired by a recipe from Kraft's Velveeta box, this quick, satisfying appetizer has become a go-to snack supper around our house. 


1/2 grilled chicken breast

1/8 cup water

1 teaspoon Tabasco 

18 oz. Kraft Velveeta cheese, diced

1 can Rotel tomatoes, undrained

1 tablespoon dried chives

1 teaspoon ground cumin


Place chicken breast in 8" square pan, add water, cover and heat at 350 degrees for 15 minutes or until warm.


Meanwhile, combine cheese, tomatoes with juice, chives and cumin in a large glass bowl.


When chicken is warm, dice it and sprinkle with Tabasco.  Then add it to the cheese mixture and cover with wax paper. Microwave on high six minutes or until cheese is melted, stirring after three minutes.


Enjoy with corn tortilla chips and a glass of white wine.

Diabetes-Friendly Chicken Burrito Bowl

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.


If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.
