There are plenty of great self-help books out today, but if you're a Texan (or from anywhere in the south) there's one that stands head and shoulders above the rest: The Try: Reclaiming the American Dream by author and cowboy ethics expert James P. Owen.

Do yourself a favor and start 2011 by reading it today. The Try is just that good. This is possibly the easiest, most common sense look at how you can make your wildest, most ambitious dreams come true.

Owen explains the key to success is all in having The Try - a cowboy term for giving 110% to the task at hand. His new book provides twelve stories of people with aspirations ranging from athletes to politicians to business moguls who have succeeded where others have failed, and explains that they were able to achieve - not because they were more talented - but because they wanted it more.

The book is a quick and easy read (158 pages) and it concludes with a seven-step plan towards success that can be adapted to any and every dream and situation.

Prepare your own Mexican quick fix with this Chipotle-inspired bowl. Carbs are moderated by filling the bowl with beans, extra veggies and chicken. No need for rice, since the beans count as carbs.

Tips:

If you love tomatoes, increase the quantity to 1/2 cup, but note that the carbohydrates will also increase.

If preparing this recipe for one person, cut all of the ingredients in half. Or simply prepare the full recipe up to the end of step 2 and store leftover chicken and vegetable-bean mixture in separate airtight containers in the refrigerator for up to 2 days. Reheat in the microwave on High for 1 to 2 minutes, or until heated through, and continue with step 3.

Health Bite: The iron, calcium, magnesium, manganese, copper and zinc in black beans help to keep bones strong and healthy.
